Home Made Bagels for the GlutenFree Person on the GO
Easy Bagels for Every Day of the Week!
Whether you are in a rush or want to sit down for a nice breakfast these bagels are the perfect treat. These are really customizable so you can make them any flavor you want! This recipe will make 12 bagels.Ingredients:
- 3 cups of GlutenFree flour
- 2 - tbsp of GlutenFree baking powder
- 5 cups of shredded mozzarella cheese
- 4 oz of cream cheese
- 4 large eggs
- desired toppings for example: sesame seeds, poppy seeds, rosemary, or more cheese!
Make sure to grab a large microwavable bowl!
- Cube the cream cheese and put it in the microwavable bowl with mozzarella cheese
- Turn the oven on to 400F and put a silicone backing sheet on the rack (or on the back of a baking tray)
- In a separate bowl combine the flour and baking powder
- In another separate bowl beat the eggs
- Put the microwavable bowl in the microwave for 2 minutes and stir halfway through, at the end stir it again until the cream cheese and mozzarella are well incorporated. They should be a well mixed mass.
- Stir in flour mixture and eggs, and while the cheese is still warm knead it with your hands until it is a nice dough.
- The dough will be incredibly sticky keep kneading until it is a nice mass
- If it becomes too difficult to mix or too hard put it back in the microwave for 10-20 seconds
- It is VERY important that the dough is completely mixed before moving on to the next step
- Divide the dough into 12 separate, equal parts
- Roll each part into a long log and pull ends together and put it on the silicone baking sheet. Repeat this with all 12 parts
- Add desired toppings (or no toppings)
- Bake for 10-14 minutes until the bagels are firm and golden/brown
- Let cool and enjoy!
There's many customizations to this recipe, for example for a low carb alternative use almond flour instead. And for a low fat option use low fat cream cheese and low fat mozzarella. Mixing in some sun dried tomatoes, pesto or herbs will also had a nice kick to your morning bagel.
Bagels fresh out the oven!
I recommend some smoked salmon and cream cheese for a classic, or some tomatoes, lettuce, turkey and bacon for a "bagel club sandwich".
