My Celiac Story
Hi!
I'm Hanna a 23 year old masters student in the US. When i was 12 i was diagnosed with Celiac's disease after being sick for years. By the time they figured out that i had celiac's i was malnourished and extremely fatigued because of my body's inability to take in forms of nourishment due to my gluten filled diet. For 2 years i had been through every possible blood test from Lyme disease, Lupus, Pfeiffer's disease (mono),to Dengue fever, and other mosquito born illnesses. But finally after looking through some family history we came to Celiac's, that's when the real struggle began.
We lived on a small island that at the time that had very little knowledge about being gluten free, and selling gluten free foods. Many times we would have to bake things ourselves due to lack of gluten free alternatives, and nights eating out would often result in hours upon hours of excruciating pain. Even eating in our own kitchen would sometimes be difficult due to my high sensitivity and the fact that i was the only one in my household who had any kind of food allergy. My mom would have to cook separate meals, use separate pans, and keep all my food separated from theirs. But throughout the years i have learned to easily live with being gluten free and even around people that are gluten full! Right now i live with my boyfriend who eats bread everyday and i have not been sick once!
On this blog i will talk about tips, tricks, and recipes for eating in, and getting EVERYONE in your household eating the same delicious meal (so you don't have to make two separate meals for the sensitive and not sensitive), and also give you tips and tricks for eating out! As well as great places to eat in a bunch of city's!
